Introduction

Sesame ginger stir-fried tempeh with brown rice

Steps

1. Slice tempeh into cubes. Heat a pan with olive oil and add tempeh to the pan. Cook it for 6 minutes until slightly golden.

2. While cooking, prepare the sauce. Whisk ginger, garlic, sesame oil, soy sauce, rice wine vinegar, and maple syrup together in a bowl

3. Add the sauce to the pan with tempeh. Add the veggies to the pan and cook for about 5 minutes, until the veggies are soft. 

4. Cook 1/2 cup of brown rice according to package instructions, then drain and serve with tempeh stir fry

How to make

Any type of rice can be used, preferably not white rice as it has less nutrients

Ingredients

  • 1 8oz block of tempeh (you can also use tofu or meat substitute)

  • 1 cup carrot sticks

  • 1 cup of green beans

  • 2 tbsp of Italian extra-virgin olive oil

  • 1  tsp fresh grated ginger

  • 1  tsp fresh garlic

  • 1 tsp sesame oil

  • 1  tsp rice wine vinegar

  • 3 tbsp soy sauce (lower sodium or regular)

  • 2 tbsp of maple syrup

  • sesame seeds, green onion

  • 1/2 cup of brown rice
