Introduction

Scrambled tofu with vegetables

Steps

1. Cook veggies: green beans, peas, mushrooms with salt, pepper, olive oil, and nutritional yeast

2. In another pan cook and toast the red peppers and add salt, pepper, olive oil 

3. Combine everything with tofu and add all the ingredients needed for tofu (see above).

4. Cook everything for about 10-15 minutes until slightly golden


How to make

Any other vegetables would work as well

Ingredients

Tofu:

  • ¼ tsp of ground cumin

  • ⅛ tsp of smoked paprika

  • 1 tbsp of Italian extra virgin olive oil

  • 2 tbsp of nutritional yeast

  • 3/4 cup (6 ounces) extra-firm tofu

Veggies: (green beans, peas, mushrooms)

  • 1/3 cup of sliced carrots

  • 1/4 cup of mushrooms

  • 1/3 cup of red bell peppers

  • 1 cup of spinach

  • 1 tbsp of nutritional yeast

  • Salt, pepper, and extra virgin olive oil
